Poor cold-room hygiene can also make inspections harder and damage a business’s reputation. Cold storage protects fish, poultry, dairy, drinks, fruits and other perishable goods only when the room is clean, organised and properly managed. Cold temperatures slow bacterial growth, but they do not eliminate bacteria or reverse contamination. Keep chilled products at the temperature suitable for each item, usually around 0°C to 5°C. Store frozen meat, fish and poultry at -18°C or colder. Separate products to prevent leaks and cross-contamination, monitor temperatures regularly, and clean spills immediately to protect stock and customers.
