Lagos Residents Raise Safety Concerns Over Commercially Produced Fufu
Some Lagos residents say they have become wary of commercially produced fufu after reports of foreign objects in purchased portions and allegations that detergent is used during cassava processing. Some now prepare it at home or buy from suppliers outside the city. Fufu is made from fermented cassava, and proper soaking, washing and fermentation are essential for both quality and safety. Inadequately processed cassava may retain harmful cyanogenic compounds. A processor in Oyingbo said her facility uses clean water and soaks cassava for about two days before processing. Residents say reliable producers still exist, but consumers need clearer hygiene standards and more confidence in the products sold in open markets.
