Grow, Process and Profit From Cassava With Less Waste
I believe cassava can help families reduce food waste and earn more when they focus on three steps: grow, process and profit. Grow cassava from healthy stem cuttings at the start of the rainy season. After harvest, process the roots quickly into products such as garri, flour or chips to reduce spoilage and extend shelf life. I encourage families to explore value-added uses for cassava, including properly processed peels for livestock feed. Food safety matters: cassava wastewater and peels must be handled and processed safely before any reuse. My challenge is simple: plant a few cassava stands, learn one processing method beyond garri, and identify one safe way to create value from what would otherwise be discarded.
