Cinnamon comes in two main varieties with distinct flavors and health profiles. Ceylon cinnamon, known as “true cinnamon,” is lighter, milder, and has thin, papery bark layers. It contains very low levels of coumarin, a compound that can harm the liver in high doses, making it safer for regular use. Cassia cinnamon is darker, stronger, and has a single, thick bark layer. It is far richer in coumarin — roughly 250 times more than Ceylon — so it’s best used sparingly. Cassia is more affordable and widely available, while Ceylon is a premium spice often sold at a higher price.
